A few months ago I pinned a graphic that claimed itself the “Best*Easiest*Tastiest* Mac and Cheese ever!”.  We shall see…

Actually, we tried this recipe and it was ridiculously easy! It tasted great and it made me happy as the recipe itself is fairly straightforward and low on processed food.  (I live with purchased pasta, I just don’t have the time to make my own.)

Easy Mac & Cheese

Given the success of this recipe and the easy in which it goes together, I found myself preparing a meal alone a couple of weeks later.  The kids were dealt with and cooking for one is a major pain.  I baked a chicken breast in the microwave in a small Pampered Chef baking stone with their chipotle rub for seasoning.  Since I’m the lazy type, I ate the chicken right out of the dish just so I wouldn’t use a plate. Please, dishes suck.

Halfway through the chicken breast, I realized I would still need more to eat.  Easy peasy, I could make this mac and cheese in the microwave in the same dish with an easy scaling back of ingredients. The base recipe is simply a 1:1:1 ratio of cheese, milk, and pasta.  After finishing the chicken, I proceeded to fill the pan with milk and pasta, thinking the chicken juices would just add a little extra flavour.  (Flavor of yum… I mean really…) Running short on cheddar, I substituted in some mozzarella to make up the difference.

I ended up with an extra-gooey chipotle seasoned mac and cheese.  From the microwave which makes it more like easy mac only less creepy.  For real!

I decided to replicate it the next time I made this mac and cheese for the kids and received major approval.  With that sort of reaction, I took the show on the road and made it for a friend who all but licked the pan clean asking for more.

Moral of the story: Mac and Cheese is good, but Chipotle Mac and Two Cheese is better!

Here’s my modified recipe:

2 Cups Milk
2 Cups Elbow Mac
2 Cups Cheddar Cheese
1/2 Cups Mozzarella Cheese
Tons of Chipotle Seasoning (This was by sight, but I’d say at least 2 Tablespoons)
