For a while I lived in Columbus, Ohio and while there I discovered the tasty of a “three-way”.

Now that three-way has pulled in some hits from search engines, get your minds out of the gutter! It’s a style of eating chili that has nothing to do with bedroom antics.

I love Skyline Chili, a Cincinnati chili restaurant that offers it’s signature meal as a “Three-Way”, “Four-Way”, or the ever racy, “Five-Way.”  It’s like an orgy for the mouth! Prepare to nom, nom, nom.

You start with a plate piled high with spaghetti noodles. Top that with your Cincinnati Chili and a healthy dose of shredded cheese.  Voile! A “Three-Way”! You can add either onions or beans, or both if you so desire. Use your imagine and you see where the other style names come from.

Now I don’t live in Ohio so i can’t pop down to my neighborhood shop. Sadness. However, I scored some cans of this yummy stuff at the local Wegman’s grocery store. Huzzah!

Interested in the concept of utilizing spaghetti squash as a low-carb and healthier alternative to pasta, I wondered how this could change the flavor.

Skyline Chili Squash Way:

First: I took two cans of Skyline Chili and cooked them on the stove-top. Mmmm.  It’s a Greek chili and so tasty.

Second: While cooking I took my spaghetti squash and I cut it in half and scraped out the core with the seeds.  The two halves went in a glass baking dish with a half-inch of water, which I then covered with plastic wrap.  I nuked this for 12 minutes and presto, steamed spaghetti squash.

Third: “Shred” that squash using a fork. It actually does look like spaghetti! I filled a large bowl with this and set everything out for dishing up.

shredding spaghetti squash with a fork makes something that looks like spaghetti

I’m using my fork to shred this squash into “spaghetti”.

The end result:

Two bowls of "spaghetti" piled high with chili and cheese.

Looks like regular Skyline Chili, just like at the restaurant. Maybe they should offer this as an option for those seeking lower carb diets!

Verdict: Everyone loved this. It was even better than making it with spaghetti in my opinion! It was so good that we maybe gorged ourselves on the yummy.

Spaghetti Squash is really popular right now on the low carb/no carb/no pasta/Gluten Free/Paleo circuit. Give it a whirl and see what you think because it’s actually one of the easiest ways you can add a vegetable to your current menu.
